As you know, I like cooking with beer and have for a while planned to do something with the beer The Mayan . I have always believed that it would be ideal to have in cooking because it has such a complex flavor with flavors that I think is beneficial to have in your cooking. Therefore I bought a piece of rib eye boneless and decided to roast it in the oven with some garlic, thyme and beer. I can tell you it was incredibly good with a fantastic balance of chili-chocolate flavor, thyme and garlic. I under-salted the beef, but that’s easy to fix afterwards. The use of a roasting bag makes all the flavors really go into the meat and a meat thermometer also helps for a good end result.
The beef was served along with mashed potatoes seasoned with truffle and nutmeg, and a bearnaise sauce to it all. Yum!
Recipe: 2-3 people
- 500 grams rib eye boneless
- 1 large clove of garlic
- 1/3 pot of fresh thyme
- salt and pepper
- Dark beer called The Mayan or similar like James Squire Jack of Spades Porter.
Season the meat all over.
Put the garlic, thyme, about 1/2 cup beer and meat into a roasting bag.
Cook in a 125C oven until the meat thermometer shows 56C.
